So many times I’ve been asked about the recipe for this low calorie cake. Its so fresh with the strawberries and if you can find low fat margarine, its even a real Weight Watchers Cake for just 6 Smart Points.
Ingredients
60g butter
200g flour
100g powdered sugar
1 egg
500g strawberries
60g almond paste
3 Tbsp sour cream
1 package red or clear gelatin glaze, no sugar added
lemon balm or mint herb for garnishing (optional)
Instructions
Heat up the oven until 180° C and grease the tart pan (Ø 28 cm) with 1 teaspoon butter.
Cut the rest of the cold butter into small cubes, you can also use a grater for that. Knead the flour with the butter, egg and powdered sugar to a smooth dough and roll it out between two layers of wrapping foil in a round shape.
Then, I take the foil and and ease the round into a tart pan, patting it firmly into the bottom and up the sides. Carefully remove the foil. Extend the dough slightly above the rim to compensate for any shrinkage during baking (around 2 cm). Pinch the tart dough with a fork a couple of times. Bake the tart shell for 20 minutes.
In the meantime wash the strawberries, pat them dry and cut them in halves. Grate the almond paste, mix it with the sour cream and spread on the tart. Arrange the strawberry halves on top.
Prepare the gelatin to packing instructions with the rest of the powdered sugar and Pour it over the strawberries. Wait until the gelatin glaze has hardened and garnish with some lemon balm or mint.
