Asian Beef with Couscous Salad

Here I combine 2 Weight Watchers Recipes in a healthy and fresh dinner! The Asian beef pairs wonderful with the Turkish couscous salad (Kisir). What a mix 😉 Enjoy your exotic meal!

 

 

 

Ingredients

300g beef tenderloin (2 pieces)
4 table spoon soy sauce
2 teaspoon sesame oil
ginger, grated
1 garlic clove, minced
Salt and Pepper
Chili powder or fresh Chili

Couscous Salad:
120g Couscous
250ml vegetable broth (2 teaspoon instant powder)
2 table spoon Ajvar
Salt and Pepper
1 1/2 bell pepper red and yellow
120g tomatoes
1/2 cucumber
2 spring onion
parsley
mint
2 garlic cloves
1 1/2 table spoon lemon Juice
2 teaspoon olive oil
1 teaspoon cumin
1 teaspoon Chili powder or Chili flakes
8 leafs butter-head lettuce

 

Directions

Prepare the Marinade with all the ingredients: soy Sauce, sesame oil, ginger, garlic, salt, pepper and Chili.
Cut the Beef fillet in big chunks and marinate it for 10 minutes. When it is marinated well enough you can roast it in the pan for 3 minutes. Than let it rest in a warm place for few minutes. You can use the oven 60°C or just cover the pan with a lid.

Couscous Salad:

Pour hot vegetable broth over the couscous and let it soak for 3 to 5 minutes. Let it cool down for around 10 minutes.

Add the Ajvar to the couscous and Season with salt and pepper, stir until everything gets a nice red color.

Chop the pepper ball, Tomatoes, cucumber, spring onions. Mince the parsley, mint and garlic. Stir in the Couscous salad.

Add the Lemon Juice and olive oil, Season with salt, pepper, cumin and Chili flakes.

Wash the lettuce leafs and add the Couscous Salad on top. If you are good in it, you can even roll it!
