I love Mangos. I could eat them all day long. Maybe that’s the reason why most of my recipes include Mango *haha* Starting my blog with one of my mango recipes made sense to me 😉
Long story short, here is my favorite healthy desert, breakfast or afternoon dish “Mango Chia Pudding”

Ingredients:
- 1/2 Cup (120ml) unsweetened almond milk
- 2 tbsp. Chia Seeds
- 1/2 tbsp. maple Syrup
- some drops vanilla flavor
- 1 yellow mango or favorite fruit
Directions:
- Mix everything together in a mason jar. Let it rest at least 4 hours, better overnight. When the pudding feels quite solid you can add your favorite topping, for example Mango.
They are much more variations than my mango version and I will share them later with you. In the meantime feel free to experiment by yourself, it’s so much fun with all these colors and fruits you can use as a topping.
Since almond milk is really hard to find in China, I’m making my own almond milk which I can store up to 3-4 days in the fridge. If you are interested I can share my “How to make your own almond milk” with you.
Enjoy your fresh Chia Pudding on a hot summer day. I will definitely do this right now, since it is already summer in Beijing.
